About Chez Hugo
Featuring the cuisine of native French Chef Steve Monnier, Chez Hugo is a seasonally inspired French bistro in the heart of Baltimore, MD. The restaurant is divided into a sixty seat dining room, an eight seat tasting room, and a fifteen seat bar, along with an open kitchen with wood-burning hearth, prep kitchen, baking kitchen, a butcher room, and aging room in the back of house. Chef Monnier’s goal at Chez Hugo is to offer approachable, seasonal French cuisine, staying true to his French roots and with a respect for French traditional specialities, within which he is well versed.
Chef Steve Monnier
After graduating from culinary school in Reims where Monnier did a French apprenticeship for two years, Monnier moved to Paris and worked at two and three Michelin stars restaurants, Le Carre Des Feuillants, Le Laurent and finally Taillevent. He then moved to Los Angeles where he cooked at L’Orangerie before moving to Baltimore and opening his first restaurant Aromes four years ago. Aromes highlighted Monnier’s experimental side to his cuisine, which can still be experienced in our tasting room. With Chez Hugo, Chef Monnier pays homage to the simple and classic French countryside cuisine that he knows and loves.
